From the Forest Bellini, to the Superb Negroni and Chocolate Walnut Old Fashioned, we have the perfect cocktail for any occasion that will tantalise your taste buds! (VIEW MENUS)Enjoy this light read we have put together to introduce you to Vašek, Bistro Rex’s Bar Manager and the man behind these cocktail creations. Vašek not only answers a few questions so you get to know him a little better, he also shares some advice on when it is most appropriate to indulge on each of the cocktails.

Václav Čech.Nick name:My friends call me Vašek.What is your role at Bistro Rex?I am the Bar Manager at Bistro Rex.How long have you been bartending?I have been bartending for over 10 years now! I worked all over the place: from China Doll to Stonewall Hotel, and even the Bavarian Bier Café.[What is your favourite drink to make?I don't really have a favourite drink to make. I like everything about bartending in general! :)What is your favourite drink to drink?That would be a classic Old Fashioned or a well-made Negroni. I really like simple classic cocktails made from good spirits.What is your favourite drink on Bistro Rex's new cocktail menu?That would be the Chocolate Walnut Old Fashioned. I like the sweet 'walnut-y' start and bitter chocolate finish. The Redbreast 12yo Irish whisky is also very smooth and works perfectly in cocktail form.What is your favourite dish at Bistro Rex?I am a steak person, so for me it's the Rib Eye (bigger = better), accompanied by Fried Rosemary Potatoes and a Cavolo Nero Salad Can you talk us through the new cocktails?The new cocktail list is very food-friendly, and include a refreshing twist on the classics.APERITIF STYLE COCKTAILS:

  • Forest Bellini: wild berries puree with sparkling wine.
  • Superb Negroni: Four Pillars Bloody Shiraz Gin, Campari, Antica Formula.

COCKTAILS TO DRINK WITH A MEAL (& TO KEEP THE THIRST AWAY):

  • Rex Lemonade: Limoncello, Cointreau, Absolut Vodka, lemon, soda.
  • Strawberry Mule: Absolut Elyx, Massenez Frais de Bois, lime, ginger beer.
  • Blood Orange Margarita: Olmeca Altos Reposado, blood orange, lime.

POST-MEAL/DESSERT COCKTAILS (AS THEY ARE WHISKY & COGNAC BASED):

  • Chocolate Walnut Old Fashioned: Red Breast 12yo, Nocello, chocolate, black walnut.
  • Mandarin Cinnamon Side Car: Martell Blue Swift, Grand Marnier, mandarin, cinnamon, lemon.
  • Purple Lady: Husk Ink Gin, Lavender, egg white, lemon.
