  • Butchering the meat, as most of it is done in house.
  • The different weights of meat we offer, which can cater for a single person or to share.
  • How to best serve each specific type of meat cuts: rare, medium rare, well done, etc.
  • Other types of meat we offer: pigs, lambs, etc.

All the meat featured at Bistro Rex are from local and regional farms, and we pride ourselves with our nose-to-tail dining philosophy, where we aim to incorporate as much of an animal as possible into our menu.
